Getting out into nature, doing something creative - writing or drawing or even daydreaming, having some alone time, and a cheeky glass of wine and some chocolate at the end of the day...with a film!
3. What is the best thing you ever had for dessert? Share the memory or the recipe.
Peppermint Crisp fridge tart - this is a South African favourite. You could probably find equivalents of the ingredients. Google them if you're interested. It's worth it! Yummy yumm!!!
Peppermint Crisp fridge tart Serves: 8 Cooking Time: 20 mins plus overnight
INGREDIENTS 2 packets tennis biscuits 1 x 380g tin caramel, softened 250ml (1 cup) fresh cream, lightly beaten 1 x 100g slab peppermint crisp chocolate, grated
INSTRUCTIONS 1. Grease a 30cm x 15cm tart dish.
2. Arrange a layer of biscuits in the base of the dish.
3. Mix together the caramel and creamand spoon a 1cm-deep layer on top of the biscuits.
4. Sprinkle a third of the chocolate on top of the caramel layer.
5. Repeat for another 2 layers or until all the ingredients are used, ending with a caramel layer topped with chocolate.
6. Refrigerate for at least 4 hours (preferably overnight) before serving.
4. What is your favorite memory of your mom, or your favorite thing about being a mom?
My favourite memory of my mum is mainly of how creative and clever she was. I was always in awe of how effortless she made everything look. From making mosaics over our old fireplace, and garden table, to DIY house jobs, painting, making clothes and handbags. And so, so, so much more! I wish I had half of her talent.
5. What are your plans for the summer (or winter, for those in the southern hemisphere)?
Spending time with family. Going to work some days. And visiting Cornwall too. Hope to make some arty things, and do some gardening.
